Green peas and mushroom muffins
Green peas and mushroom "muffins" are a simple yet different idea that will add a touch of originality to your party buffet.
Ingredients for 6 servings:
Chop the onion and sauté it in a pan with a teaspoon of extra-virgin olive oil. Add the fresh peas and salt to taste, and cook them until soft. Add tiny bits of water whenever necessary. Let them cool down, then use an immersion mixer to turn them into a cream.
In another pan, cook the mushrooms in a tablespoon of olive oil and a clove of garlic, add salt and pepper to taste, and a bit of chopped parsley
In a bowl, mix the peas and the mushrooms, then add 20 g olive oil, the flour, the yeast, the Parmesan cheese and, finally, the egg whites. Mix well.
Butter six muffin moulds and spoon the resulting mixture, dusting the surface with a bit of grated Parmesan.
Bake at 180° C for 20 minutes. The muffins are cooked when you slide a toothpick into one and it comes out dry.
These pea and mushroom muffins are perfect served with cold cuts and cheeses.
